The History
Pecorino Siciliano PDO is the oldest cheese produced in Sicily, perhaps the oldest in Europe.
Homer wrote in a verse of the Odyssey (IX BC) "When half of the snow-white milk curdled he put it in the woven baskets" .
These are the words of Ulysses as he tells about Polyphemus in the art of cheese making and that bring back to the present day the techniques used in those days to produce cheese.
Some time after Pliny the Elder (23-79 AD) wrote in Naturalis Historia 'Rome, where the wealth of all peoples can be closely judged', by classifying the types of cheese it refers to sicilian cheese as one of the most pleasant of the time. he was talking about Pecorino Siciliano.
The land and production processes used have remained unchanged over time. Handed down through the generations they have come down to the present day.
