There are 21 members of the new voluntary consortium for the protection of Pecorino Siciliano PDO.
through their commitment, the consortium can safeguard a cheese that represents the historical and cultural heritage of Sicily and the whole of Italy.
The Pecorino Siciliano PDO is manufactured exclusively with whole sheep's milk, fresh and coagulated with lamb rennet.
The sheep that supply the milk to the cheese-makers are raised on free pasture.
Salting is manually applied to each wheel, the seasoning period is never less than 4 months and is carried out in naturally ventilated rooms.
Only in this way the Pecorino Siciliano PDO acquires its own character, preserving all the flavors of Sicily.
