Modifica del disciplinare di produzione

The application for approval for a no minor modification of the production disciplinary of Pecorino Siciliano PDO has been published (GUUE C 170 of 18.5.2020).
Pursuant to Article 50, paragraph 2, letter a) of Regulation (EU) no. 1151/2012 of the European Parliament and of the Council on agricultural and food quality products, the consortium is going to consolidate the production specification in a single document and thus satisfy the modern demands of the market.
For this reason it was decided to eliminate the Tuma and Primo sale types, which were previously marketed immediately after production and after about 10 days respectively. In their place, the new Fresco type was introduced, characterized by a minimum maturation period of 20 days necessary for the Sicilian Pecorino to begin to have quality characteristics that differentiate it from other pasteurized milk pecorino. The Labeling, which before now was self-regulated by the producer group, has been regulated in the new specification with a specific article. Together with the registration of the logo and the harmonization of the certification procedures, maximum traceability of the product by consumers will be available starting from the next campaign, in addition, the consortium will benefit from greater effectiveness of the promotion campaigns that can make use of a common graphic.
